French Toast .. for One…

I make myself a single serving of French Toast from time to time using my own sturdy homemade bread. Yesterday I made a batch of white bread- 4 loaves to be exact. When they cooled completely I sliced each 24 OZ loaf into approximately 14 pieces, that’s including the 2 heels. As is my habit I store my bread this way: Place 3 slices of bread in a plastic zip lock sandwich bag  and squeeze out as much air as possible without damaging the bread. Next store the bread in the freezer door to keep it all fresh and it doesn’t go to waste like store bought going all moldy! Since I was craving French Toast after watching UNIQUE SWEETS the other day, I decided to make my French Toast for One recipe this morning:

FRENCH TOAST FOR ONE

1 slice Homemade Bread (One day old is better)

1 Egg

2 TB Milk

1/8 to 1/4 tsp Vanilla

Beat the milk, egg and vanilla well and pour into a flat container slightly larger than the slice of bread, and place the bread in to soak up the egg mixture. Turn over after a few minutes.

Cook in a TB butter in a cast iron skillet on low heat until brown and crispy on both sides. I usually fry an egg to serve with the French toast  to balance out the carb intake then I pour one or two Tbs of syrup over it.
