Yesterday we used up the last of my homemade bread, so today I am making my usual 3 loaf batch. I was forced to use bleached all-purpose flour because that’s all I had on hand. I always use unbleached AP flour by the way. Now the yeast I used was 18 months past the use by date but it was refrigerated and it worked fine. I’m happy to say the loaves are rising in their pans as I type!
